Blue Ribbon Cheesecake Recipe
- 1 1/2 c. graham cracker crumbs
- 1/2 c. (1 stick) melted butter
- 3 tbsp. sugar
- 3 (8 ounce.) pkg. cream cheese, softened
- 1 c. sugar
- 3 Large eggs
- 1 teaspoon vanilla
- 1/2 c. (1 stick) butter, melted and cooled
- Combine first 3 ingredients.
- Press mix over bottom and 1/2 to 3/4 inch up sides of a 9-inch springform pan.
- Beat cream cheese till fluffy.
- Gradually beat in sugar.
- Add in Large eggs, one at a time, beating well after each addition.
- Beat in vanilla and melted butter till thoroughly mixed.
- Pour over prepared crust in springform pan and bake in center of a 350 degree oven for 50-60 min.
- Center should wiggle a bit when done, but will hard up when chilled.
- Chill for 4 hrs or possibly overnight.
- Serves 12.
- Keep cool.
