Sriracha Potato Salad

  1. Boil potatoes until fork tender.
  2. Submerge in ice water to stop the cooking process.
  3. Drain.
  4. Pat dry.
  5. Combine mayonnaise, Sriracha, vinegar, and dry seasonings in a large mixing bowl.
  6. Toss potatoes and veggies with dressing and fresh basil.
  7. *Optional: Sweat veggies and garlic in olive oil until tender.
  8. Variations; Sausage, chicken, lemongrass, shallots, roasted bell peppers
