Low Gi Green Apple Snow
- 4 peeled green apples, cored and sliced
- 1 teaspoon sugar
- 12 teaspoon ground cinnamon
- 4 tablespoons water
- 2 teaspoons gelatin
- 3 egg whites
- Place the sliced apples, sugar, cinnamon and 3 tablespoons water in a saucepan.
- Simmer, covered, for 8 minutes or until tender.
- Mash until pureed.
- Spread the gelatin over 1 tablespoons water in a small heatproof bowl and leave to go spongy.
- Place the bowl in a pan of just boiled water just off the heat (the water must come halfway up the bowl).
- Mix to dissolve.
- Stir into the hot puree.
- Beat the egg whites until still peaks form, after that fold into the hot puree - the heat must slightly cook the whites.
- Spoon the mixture into glass bowls, and chill just before serving.
