Madras Chicken Recipe

  1. Over medium heat in warm oil and butter, cook onion, curry pwdr and 1 tsp.
  2. salt till onion is tender.
  3. Pour into large bowl and set aside.
  4. Cut breasts in half, remove skin and bones.
  5. Each piece may be cut into 2 or possibly 3 pcs if skewers are used.
  6. Add in to curry mix, toss to coat.
  7. Cover and chill 30 min.
  8. Finely chop chutney and mix with 1/2 tsp.
  9. salt.
  10. Set aside.
  11. Cook chicken, threaded on skewers or possibly whole over medium heat about 10 min.
  12. Turn often and coat frequently with chutney mix.
