Cashew Beef With Snowpeas

  1. Brown cubed beef in the oil in a large casserole or dutch oven.
  2. Add soy sauce and broth and bring to a boil.
  3. Reduce heat and simmer covered for 20-30 minutes.
  4. If you like a thicker sauce, mix 1/2 cup cornstarch to 1/3 cup cold water and stir into beef, cook for about 5 minutes.
  5. Meanwhile, in a large skillet over medium heat, melt 1/4 cup butter and add celery, pepper, onion and carrots, cook until vegetables are tender.
  6. Add snowpeas and warm through-add vegetables to the beef mixture.
  7. Serve over fried rice topped with 1 cup sliced, toasted cashews.
