Cashew Beef With Snowpeas
- 2 T vegetable oil
- 6-7 c beef stock (canned or homemade)
- 2-3 lbs lean beef or sirloin tips, cubed
- 1/2 c soy sauce
- 1 c celery
- 1 c onion
- 1 c bell pepper
- 1 c carrots
- 1 pkg snowpeas
- Brown cubed beef in the oil in a large casserole or dutch oven.
- Add soy sauce and broth and bring to a boil.
- Reduce heat and simmer covered for 20-30 minutes.
- If you like a thicker sauce, mix 1/2 cup cornstarch to 1/3 cup cold water and stir into beef, cook for about 5 minutes.
- Meanwhile, in a large skillet over medium heat, melt 1/4 cup butter and add celery, pepper, onion and carrots, cook until vegetables are tender.
- Add snowpeas and warm through-add vegetables to the beef mixture.
- Serve over fried rice topped with 1 cup sliced, toasted cashews.
