Aegean Artichoke And Penne Pasta Salad Recipe

  2. Cut stems off artichokes.
  3. Peel off tough outer leaves to reveal yellow-green hearts.
  4. Cut artichokes into quarters.
  5. Combine 1/4 c. lemon juice with 2 c. water in a medium bowl.
  6. Add in artichokes to lemon water and toss to prevent discoloration.
  7. Drain.
  8. Steam artichokes till tender, about 20 min.
  9. chill.

  11. In a large pot, bring 2 qts water to a rapid boil.
  12. Add in 1 tsp.
  13. salt and penne.
  14. Cook penne till al dente, about 10 min.
  15. Drain and rinse with cool water.

  17. To make salad dressing: combine tomato juice, extra virgin olive oil, lemon juice, garlic, parlsey, basil, salt and pepper in a food processor or possibly blender and puree for 30 seconds.

  19. Toss together artichokes, penne, capers, olives and feta cheese in a large bowl salad bowl.
  20. Pour dressing over and toss well.
