t-bone steak with chipotle-cilantro butter
- 1 butter
- 2 tbsp chopped canned chipotle chiles en adobo
- 2 tbsp fresh chopped cilantro
- 1 tbsp tequila
- 4 10oz - 12oz t-bone steak
- 1 tsp salt
- 1 tsp fresh ground black pepper
- Combine butter, Chile's, cilantro, and tequila in a bowl and stir until incorporated.
- Place a sheet of aluminium foil on a work surface and cover with an equal size piece of plastic wrap.
- Spoon butter mixture into center and roll into log, twisting ends, until a tight cylinder is formed.
- Refrigerated at least 3 hours and up to overnight.
- Heat a grill or grill pan over medium-high heat.
- Season steaks with salt and pepper and grill on one side for 4 to 5 minutes.
- Meanwhile, slice butter log into eight equal-size pieces.
- Flip steaks and top each steak with 2 butter slices.
- Continue to grill until butter begins to melt, another 4 to 5 minutes.
- Transfer to plate and serve.
