t-bone steak with chipotle-cilantro butter

  1. Combine butter, Chile's, cilantro, and tequila in a bowl and stir until incorporated.
  2. Place a sheet of aluminium foil on a work surface and cover with an equal size piece of plastic wrap.
  3. Spoon butter mixture into center and roll into log, twisting ends, until a tight cylinder is formed.
  4. Refrigerated at least 3 hours and up to overnight.
  5. Heat a grill or grill pan over medium-high heat.
  6. Season steaks with salt and pepper and grill on one side for 4 to 5 minutes.
  7. Meanwhile, slice butter log into eight equal-size pieces.
  8. Flip steaks and top each steak with 2 butter slices.
  9. Continue to grill until butter begins to melt, another 4 to 5 minutes.
  10. Transfer to plate and serve.
