Shrimp Cole Slaw Aspic Recipe
- 2 1/2 lbs. shrimp
- 1 (3 1/4 ounce.) pkg. crab boil mix
- 2 1/4 c. shredded cabbage
- 2 1/4 c. mayonnaise
- 2-4 tbsp. grated onion
- 1/4 teaspoon red pepper
- 3 env. unflavored gelatin
- 3 c. cool water, divided
- 2 1/4 c. shredded carrots
- 1/2 c. + 1 tbsp. lemon juice
- 3/4 teaspoon salt
- Bibb lettuce
- Lemon slices
- Combine shrimp and carb boil mix; add in boiling water to cover.
- Cook 3-5 min and drain well.
- Rinse shrimp with cool water.
- Peel and devein.
- Leave tails on 1 c. shrimp for garnish.
- Soften gelatin in 1 c. water till dissolved.
- Combine gelatin mix, 2 c. water, cabbage, carrots, mayonnaise, lemon juice, onion, salt, pepper, 3 c. shrimp.
- Spoon mix into oiled 9-c. mold.
- Refrigeratetill hard.
- Unmold on Bibb lettuce; garnish with reserved shrimp and lemon slices.
