Mock Apple Pie
- 2 each pie shell (9 inch) unbaked
- 4 cups water
- 1 1/2 cups sugar
- 4 teaspoons cream of tartar
- 40 each crackers ritz
- 2 tablespoons butter
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 x lemon juice of
- 1 x lemon grated rind of
- Make your favorite pie crust (top and bottom).
- Boil water, sugar and cream of tartar.
- Add whole crackers, 1 at a time.
- Boil 2 minutes.
- Add remaining ingredients.
- Cool.
- Pour into prepared pie shell.
- Cover with top crust.
- Slit top for steam vents.
- Bake @ 425F (220C) for 10 minutes.
- Reduce heat to 350F (180C).
- Continue to bake 20 to 25 minutes or until golden brown.
- Remove from oven.
- Cool.
