Garden Vegetable Platter (Kosher)

  1. Bring spinach, parsley, water, onions and tarragon to boil in small saucepan.
  2. Reduce heat to low; cover.
  3. Simmer 1 minute.
  4. Drain.
  5. Place spinach mixture and all remaining ingredients in blender or food processor container fitted with steel blade; cover.
  6. Blend until smooth.
  7. Cover.
  8. Refrigerate.
  9. Serve with assorted cut-up fresh vegetables.
