Garden Vegetable Platter (Kosher)
- 1 cup torn spinach
- 1/2 cup fresh parsley, stemmed
- 1/4 cup cold water
- 3 Tbsp. sliced green onions
- 1/2 tsp. dried tarragon leaves, crushed
- 1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
- 3/4 cup chopped cucumber
- 1/2 tsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 3 drops hot pepper sauce
- 1/4 tsp. salt
- Bring spinach, parsley, water, onions and tarragon to boil in small saucepan.
- Reduce heat to low; cover.
- Simmer 1 minute.
- Drain.
- Place spinach mixture and all remaining ingredients in blender or food processor container fitted with steel blade; cover.
- Blend until smooth.
- Cover.
- Refrigerate.
- Serve with assorted cut-up fresh vegetables.
