Chop Salad
- 1 tablespoon Dijon mustard
- 2 tablespoons white wine vinegar
- 1 tablespoon apple cider vinegar
- 6 tablespoons olive oil
- salt and pepper
- 1 red bell pepper
- 1 red onion
- 6 medium tomatoes
- 12 English cucumber
- 2 heads romaine lettuce
- 1 radicchio
- 1 cup Italian parsley
- 1 cup basil
- 1 cup mint
- 6 ounces feta
- Prepare the dressing by mixing until combined mustard, olive oil, both vinegars and add salt and pepper to taste.
- On large cutting board chop all the veggies into small 1/2 inch size pieces combining as you chop each item.
- Slowly add dressing to vegetables and mix until the taste is perfect.
