Pumpkin and Brie Filo Pies
- 1kg pumpkin, peeled and chopped
- 250g KRAFT* Brie, sliced into thin wedges
- 8 spring onions, finely chopped
- 2 eggs, lightly beaten
- 1/4 cup flour
- 1 tablespoon finely chopped thyme
- spray olive oil
- 10 sheets filo pastry
- 2 tablespoons pumpkin seeds
- Boil, steam or microwave pumpkin until tender, mash until smooth.
- Fold through brie, onions, eggs, flour and thyme.
- Spray a sheet of filo with oil, top with another sheet and spray with oil.
- Fold sheets in half and slice into 4 square pieces.
- Continue with remaining filo.
- Push pieces into 18 x 1/2 cup capacity greased muffin tins.
- Spoon pumpkin filling evenly between the filo cases and sprinkle with pumpkin seeds.
- Bake at 180C for 15-20 minutes or until filling has set.
- Serve warm or cold.
