Pancit Bijon
- 2 tablespoons canola oil
- 2 cups broccoli, chopped in 1 inch pieces
- 14 cup onion, sliced
- 14 cup fresh mushrooms, sliced
- 1 cup celery, chopped
- 1 cup carrot, thinly sliced
- 1 cup Chinese cabbage, shredded
- 5 tablespoons soy sauce
- 8 ounces rice sticks (called bijon)
- Saute' broccoli, onion, mushrooms, and celery for about 2 minutes.
- Add carrots and cook an additional 2 minutes, then add cabbage.
- Break rice sticks apart; soak in warm water until tender.
- Drain and add to vegetables.
- Add soy sauce - mixing well.
