Boboli Pizza with Garlic, Peppers and Goat Cheese

  1. Preheat oven to 450F (230C).
  2. Heat olive oil in a heavy large skillet over medium-low heat.
  3. Add sliced onion and garlic and saute until very soft, about 20 minutes.
  4. Add sliced bell peppers and saute 5 minutes.
  5. Mix in dried crushed red pepper.
  6. Season with salt and pepper.
  7. Place Boboli on a pizza pan or cookie sheet.
  8. Tip skillet so oil accumulates at one side.
  9. Brush Boboli with oil in skillet.
  10. Top with onion-pepper mixture.
  11. Sprinkle with cheese and thyme.
  12. Bake until cheese melts, about 12 minutes.
  13. Cut into wedges and serve.
