Apple Shortbread Pie Recipe
- 2 c. flour
- 1/2 c. white sugar
- 1/4 tsp salt
- 3/4 c. chilled butter, diced
- 2 x egg yolks, beaten
- 1 1/4 lb Golden brown Delicious Apples, peeled, cored and cut into 1/4 in. slices
- 1/4 c. light brown sugar, packed
- 1 tsp flour
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- Preheat oven to 400.Sift flour, 1/2 c sugar, and salt into large bowl.
- Cut in butter to coarse crumbs.
- Mix in egg yolks.
- Remove 1/4 of mix and set aside.
- Press remainder onto bottom and sides of 8 in.
- tart shell or possibly pie pan.
- In large bowl combine apples, brown sugar, flour, cinnamon, and nutmeg.
- Place apples into crust and sprinkle top with remaining crumb mix.
- Place on baking sheet and bake 15 minutes.
- Reduce heat to 350 and continue baking 20 minutes.
- 8 servings.
