SHAKE 'N BAKE Chicken & Potatoes Casserole

• 1 chicken (3-1/2 lb.) cut up Whole Foods 1 lb For $3.99 thru 02/09
• 1 pkt. SHAKE 'N BAKE Chicken Coating Mix
• 1 lb. baking potatoes (about 3), quartered Safeway 2 pkg For $5.00 thru 02/09
• 1-1/2 cups baby carrots Target 2 lb For $3.00 thru 02/06
• 1 red onion, cut into wedges
• 1/2 cup KRAFT Lite House Italian Dressing

1. Heat oven to 400F.
2. Coat chicken with coating mix as directed on package; place in 13x9-inch baking dish sprayed with cooking spray.
3. Add potatoes to baking dish.
4. Drizzle dressing evenly over chicken and vegetables.
5. Bake 45 min.
6. or until chicken is done (165F) and vegetables are tender.
