Cajun Meatloaf

  1. Preheat oven to 350 degrees F.
  2. Saute onion and garlic in chicken broth until soft.
  3. Stir in red peppers, tomato paste, chili sauce, and Cajun spices.
  4. Cook on low heat for 10 minutes.
  5. Cool slightly.
  6. In a large bowl, combine ground meats, sauteed onion mixture, and Worcestershire sauce.
  7. Add the bread crumbs, form into a loaf shape and place into ungreased 3 1/2o by 8o loaf pan.
  8. Brush with 2 tablespoons of chili sauce.
  9. Bake until cooked through for 40 to 50 minutes.
  10. Cool before cutting into 8 slices.
