Sweet Potato Kinpira Stir Fry
- 2 large potatoes' worth Sweet Potato Peel (Kintokiimo)
- 1 dash more than 1 tablespoon Vegetable oil
- 3 tbsp Mirin
- 1 tbsp Mentsuyu (This time I used super concentrated mentsuyu)
- 1 just 1 pinch Salt
- I used the leftover sweet potato peel from making.
- Take the peel and soak in water to remove the bitterness.
- Once the water becomes cloudy, repeat this 2 to 3 more times.
- Drain the water and them cut the peel thinly into 4 - 5 cm long by 3 mm wide pieces .
- Add the vegetable oil to a frying pan and stir fry the pieces of peel over medium heat.
- Turn the pieces over in the oil, making sure they are all evenly coated.
- Once they are all soaked in the oil and they have turned yellow, add in the mirin and the mentsuyu.
- Once the liquid has disappeared, turn off the heat.
- Once they're done cooking, add a pinch of salt and they are ready to eat.
- They are delicious when cooled, and they are great in a bento or as a sweet snack.
