Sweet Potato Kinpira Stir Fry

  1. I used the leftover sweet potato peel from making.
  2. Take the peel and soak in water to remove the bitterness.
  3. Once the water becomes cloudy, repeat this 2 to 3 more times.
  4. Drain the water and them cut the peel thinly into 4 - 5 cm long by 3 mm wide pieces .
  5. Add the vegetable oil to a frying pan and stir fry the pieces of peel over medium heat.
  6. Turn the pieces over in the oil, making sure they are all evenly coated.
  7. Once they are all soaked in the oil and they have turned yellow, add in the mirin and the mentsuyu.
  8. Once the liquid has disappeared, turn off the heat.
  9. Once they're done cooking, add a pinch of salt and they are ready to eat.
  10. They are delicious when cooled, and they are great in a bento or as a sweet snack.
