Diet Pineapple Upside-Down Cake

  1. Preheat oven to 400u0b0.
  2. Spray an 8 x 8 x 2-inch pan.
  3. Drain crushed pineapple, reserving juice.
  4. Sprinkle brown sugar onto bottom of pan.
  5. Top with an even layer of crushed pineapple. Slice cherries in half; arrange, cut side up, in pan.
  6. In medium bowl, combine flour, baking powder and salt; set aside.
  7. In a large bowl, mix applesauce, sugar, reserved pineapple juice and egg whites.
  8. Add flour mixture; mix just to blend.
  9. Gently pour batter over pineapple.
  10. Bake for 30 to 40 minutes.
  11. Cool 10 minutes.
  12. Invert cake onto serving dish and cool completely. Makes 8 servings.
