Diet Pineapple Upside-Down Cake
- 1 (8 oz.) can crushed pineapple, drained (reserve juice)
- 1/2 c. brown sugar
- 6 maraschino cherries
- 1 1/2 c. all-purpose flour
- 2 Tbsp. baking powder
- 1/4 tsp. salt
- 1/2 c. applesauce
- 1 c. sugar
- 3 egg whites
- Preheat oven to 400u0b0.
- Spray an 8 x 8 x 2-inch pan.
- Drain crushed pineapple, reserving juice.
- Sprinkle brown sugar onto bottom of pan.
- Top with an even layer of crushed pineapple. Slice cherries in half; arrange, cut side up, in pan.
- In medium bowl, combine flour, baking powder and salt; set aside.
- In a large bowl, mix applesauce, sugar, reserved pineapple juice and egg whites.
- Add flour mixture; mix just to blend.
- Gently pour batter over pineapple.
- Bake for 30 to 40 minutes.
- Cool 10 minutes.
- Invert cake onto serving dish and cool completely. Makes 8 servings.
