blueberry& banana nut bread
- 1/2 cup melted butter
- 1 tsp vanilla
- 1 tsp baking soda
- 4 small ripe bananas, mashed
- 1 cup Splenda
- 2 eggs
- 1 1/2 cup flour
- 1/2 tsp salt
- 1 1/2 cup blueberries
- 1 chopped pecans, to taste
- preheat oven to 325
- grease and flour 2 bread pans
- combine butter& Splenda.
- beat in eggs
- add mashed bananas
- measure out flour, minus 2Tbsp.
- for berries
- add baking soda& salt to flour, mix, then fold in to banana mixture
- stir in vanilla
- sprinkle remaining flour over berries to coat.
- fold in to mixture.
- fold in nuts
- transfer in to bread pans
- bake for 35 min
