Gluten Free Zucchini Fritters
- 2 medium zucchini
- 2 green onions
- 14 cup almond flour
- 14 cup parmesan cheese, freshly grated
- 2 eggs
- salt & pepper
- 2 tablespoons coconut oil (for frying)
- Grate zucchini and parmesan into a bowl.
- add eggs, green onions, almond flour and season with salt.
- Heat oil in skillet over medium heat waiting for pan to get hot.
- Spoon mixture into pan and fry until golden brown, approx 2-3 min per side.
- Serve with applesauce and/or sour cream.
