Crusty Ham Souffle Recipe
- 2 tbsp. fine dry bread crumbs
- 3 tbsp. butter
- 1/4 c. all-purpose flour
- 1/4 teaspoon dry mustard
- 1/8 teaspoon salt
- Dash of pepper
- 1 c. lowfat milk
- 1 c. diced fully cooked ham
- 1/4 c. finely minced green pepper
- 1 tbsp. snipped parsley
- 1 teaspoon grated onion
- 3 egg yolks
- 3 stiff-beaten egg whites
- Grease a 1 1/2 qt souffle dish.
- Coat the inside with bread crumbs.
- Heat butter; stir in flour, mustard, salt, and pepper.
- Add in lowfat milk.
- Cook and stir till thickened and bubbly.
- Continue 1 minute.
- Remove from heat.
- Stir in ham, green pepper, parsley, and onion.
- Beat yolks till thick and lemon-colored.
- Gradually add in ham mix, stirring constantly.
- Cold slightly.
- Gradually pour yolk mix over beaten egg whites, folding to blend.
- Turn into dish.
- Bake in 325 degree oven 35 min or possibly till knife inserted near center comes out clean.
- Serve immediately.
- Serves 4.
