Crusty Ham Souffle Recipe

  1. Grease a 1 1/2 qt souffle dish.
  2. Coat the inside with bread crumbs.
  3. Heat butter; stir in flour, mustard, salt, and pepper.
  4. Add in lowfat milk.
  5. Cook and stir till thickened and bubbly.
  6. Continue 1 minute.
  7. Remove from heat.
  8. Stir in ham, green pepper, parsley, and onion.
  9. Beat yolks till thick and lemon-colored.
  10. Gradually add in ham mix, stirring constantly.
  11. Cold slightly.
  12. Gradually pour yolk mix over beaten egg whites, folding to blend.
  13. Turn into dish.
  14. Bake in 325 degree oven 35 min or possibly till knife inserted near center comes out clean.
  15. Serve immediately.
  16. Serves 4.
