Sculaccione

  1. To make the simple syrup, combine the sugar and water in a small saucepan and bring the mixture to a boil over high heat.
  2. Reduce the heat and simmer until the sugar is dissolved.
  3. Turn off the heat and set aside to cool the syrup to room temperature.
  4. Store refrigerated in an airtight container for up to a week.
  5. To make each cocktail, combine the tequila, lime juice, grapefruit juice, Campari, bitters, and simple syrup in a shaker filled with ice and shake vigorously.
  6. Fill an old-fashioned glass with ice, strain the cocktail into the glass, and garnish with a lime wheel.
