Light Banana Bread
- 1 cup canola oil
- 1 12 cups Splenda Sugar Blend for Baking
- 4 eggs, slightly beaten
- 2 teaspoons banana extract
- 2 teaspoons lemon juice
- 2 cups mashed bananas (3 large bananas)
- 12 teaspoon salt
- 2 12 cups all-purpose flour
- 2 teaspoons baking soda
- 12 teaspoon baking powder
- 12 cup walnuts, chopped
- Preheat oven to 350 degrees.
- Blend oil and sugar substitute together in a large bowl.
- Add banana extract,lemon juice and eggs; beat well.Stir in mashed bananas and set aside.
- Sift dry ingredients together and combine with banana mixture.
- Stir in chopped walnuts.
- Pour into a standard loaf pan coated with "Pam with flour" non-stick spray and bake for 50 minutes or until a toothpick inserted into the center comes out clean.
- Cool in pan.
- Cut into 16 pieces.
