Light Banana Bread

  1. Preheat oven to 350 degrees.
  2. Blend oil and sugar substitute together in a large bowl.
  3. Add banana extract,lemon juice and eggs; beat well.Stir in mashed bananas and set aside.
  4. Sift dry ingredients together and combine with banana mixture.
  5. Stir in chopped walnuts.
  6. Pour into a standard loaf pan coated with "Pam with flour" non-stick spray and bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in pan.
  8. Cut into 16 pieces.
