Endive Salad with Toasted Almond Vinaigrette

  1. Whisk shallots and vinegar in a medium bowl and season with salt and pepper.
  2. Gradually whisk in olive oil.
  3. Whisk in almonds.
  4. Re-season with salt and pepper.
  5. Toss endive in a large bowl with enough dressing to coat.
