Cranberry Mousse
- 1 3 ounce box cranberry jello mix
- 1 cup boiling water
- 1 cup cold fresh unsweetened cranberrie juice, my recipe attached in direction step #2
- 1 1/4 cup cold heavy whipping cream
- 2 tbsp confectioner's sugar
- 1/2 tsp vanilla extract
- 3 tbsp shaved dark chocolate
- Dissolve jello in boiling water
- Combine this with the cold cranberrie juice, recipe for the juice attached below and mix well.
- Refigerate just until cold but NOT setting up, about 20 minutes but keep an eye on it, it just needs to be cold

- Meanwhile whip cream to soft peaks, beat in sugar and vanilla, then beat in cold cranberry mixture
- Spoon into decorative glassed and refigerate at least 2 hours to set
- Garnish with whipped cream, candied cranberries, recipe attached below and grated chocolate
