Spicy Posole Soup

  1. Chop onion and garlic and let sit for 5 minutes before cooking.
  2. Rinse kale and remove stems.
  3. Chop fine.
  4. Heat 1 TBS broth in medium-sized soup pot.
  5. Saute onion in broth over medium heat for 5 minutes stirring frequently, until translucent.
  6. Add garlic and continue to saute for another minute.
  7. Add remaining ingredients except kale and cilantro.
  8. Bring to a boil on high heat.
  9. Once it comes to a boil, reduce heat to medium-low and simmer for 10 minutes, uncovered.
  10. Add kale and cook for 5 more minutes.
  11. Add cilantro, salt, and pepper.
