Golden Couscous
- 1 1/2 c. canned carrot juice
- 1 1/2 c. chicken broth
- 1/2 tsp. salt
- 1/4 tsp. freshly ground white or black pepper
- 1 1/2 c. couscous
- 2 carrots
- 2 tbsp. unsalted butter
- 1/2 c. chopped mint or basil
- ,5 c. golden raisins
- 1/2 c. pecans
- In 3-quart saucepan, combine carrot juice, broth, salt, and pepper over medium heat and bring to a boil.
- Add couscous, carrots, butter, and mint and stir to combine.
- Remove pan from heat, cover and let 5 minutes, or until liquid has been absorbed.
- Fluff with fork and separate grains.
- Add raisins and toasted pecans, and fluff to combine.
