Golden Couscous

  1. In 3-quart saucepan, combine carrot juice, broth, salt, and pepper over medium heat and bring to a boil.
  2. Add couscous, carrots, butter, and mint and stir to combine.
  3. Remove pan from heat, cover and let 5 minutes, or until liquid has been absorbed.
  4. Fluff with fork and separate grains.
  5. Add raisins and toasted pecans, and fluff to combine.
