Basic White or Bechamel Sauce

  1. Melt butter or heat oil in medium saucepan over medium heat.
  2. Stir in glutinous rice flour, and cook 1 to 2 minutes, or until mixture is smooth and bubbling, stirring constantly.
  3. Stir in milk.
  4. Cook 3 to 5 minutes, or until sauce has thickened, whisking constantly.
  5. Season with salt and pepper, if desired.
