Basic White or Bechamel Sauce
- 1/4 cup butter or oil
- 1/4 cup glutinous or sweet rice flour
- 2 cups low-fat milk or dairy-free milk
- Melt butter or heat oil in medium saucepan over medium heat.
- Stir in glutinous rice flour, and cook 1 to 2 minutes, or until mixture is smooth and bubbling, stirring constantly.
- Stir in milk.
- Cook 3 to 5 minutes, or until sauce has thickened, whisking constantly.
- Season with salt and pepper, if desired.
