Banana Squares
- 2 eggs (separated)
- 2/3 cup shortening
- 1-1/2 cup sugar
- 1 cup mashed ripe bananas
- 1-1/2 cup all-puropse flour
- 1 tsp. baking soda
- 1/4 cup sour milk
- 1/2 tsp. vanilla extract
- 1/2 cup chopped walnuts,optional
- Whipped cream (optional)
- Beat egg whites till soft peaks from; set aside.
- Cream shortening and sugar.
- Beat in egg yokes, mix well.
- Add bananas.
- Combine flour, baking soda; add to creamed mixture alternately with milk, beating well after each addition.
- Add vanilla.
- Fold in egg whites.
- Fold in nuts if desired.
- Pour into 13x9" greased pan.
- Bake at 350F for 45-50 minutess.
- Cool on wire rack.
- Garnish with whipped cream.
- ** To sour milk: place 1 tsp.
- white vingar in a measuring cup.
