Caramelized Fennel and Onions with Orange Rind

  1. Cut each fennel bulb in half, remove stalks and root ends, and cut into 14-inch slices.
  2. Combine with the sliced onion.
  3. Add salt and pepper.
  4. Heat the oil and butter together in a large skillet over a medium heat.
  5. Add the fennel and onion, and cook, stirring occasionally, for about 10 minutes or until theyre caramelized.
  6. Zest then juice the orange.
  7. Add juice to the fennel and onion mixture and stir.
  8. Garnish with fronds and orange zest.
  9. Serve immediately.
