Dark Chocolate Cherry Chews
- 2 12 cups all-purpose flour
- 1 12 teaspoons baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, at room temperature
- 1 cup packed brown sugar
- 34 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- scant teaspoon almond extract (teaspoon not quite full)
- 8 ounces dark chocolate, chopped into small pieces
- 1 cup dried tart cherry, chopped
- Preheat oven to 350 degrees.
- In a medium bowl, whisk together flour, soda, and salt; set aside.
- Using an electric hand mixer or stand mixer, cream together the butter and sugars.
- Add eggs, once at a time, blending well after each addition.
- Blend in vanilla and almond extracts.
- Blend in flour mixture, a little at a time, until its all incorporated.
- By hand, stir in cherries and chocolate pieces.
- Drop by tablespoonfuls onto a parchment-lined baking sheet, spaced at least two inches apart.
- Bake in a preheated 350 degree oven for 10-13 minutes or until edges are starting to brown.
- Let cool on baking sheet for ten minutes then move to wire racks to cool completely.
