Mini Bacon Spinach Bites
- 125 g (1/2 of 250-g pkg.) Philadelphia Brick Cream Cheese, softened
- 1/2 cup finely chopped red onion
- 1 pkg. (300 g) frozen chopped spinach, thawed, squeezed dry ( about 1-1/2 cups)
- 1/3 cup Oscar Mayer Real Bacon Bits
- 3 Tbsp. flour
- 1 cup Cracker Barrel Shredded Tex Mex Cheese
- 4 eggs, lightly beaten
- Preheat oven to 350F.
- Mix cream cheese and onion in medium bowl until well blended.
- Add spinach, bacon bits, flour and shredded cheese; mix well.
- Stir in eggs until well blended.
- Spoon evenly into 24 well greased and floured miniature muffin pan cups.
- Bake 14 to 16 min.
- or until centres are set and tops are golden brown.
- Serve warm or chilled.
