Mocha Waffles with Chocolate Whipped Cream

  1. To make the Chocolate Whipped Cream: In a bowl, whip the cream until soft peaks form and beat in the cocoa, sugar, and liqueur.
  2. Cover and refrigerate until needed or up to 2 days.
  3. This recipe yields about 1 1/2 cups of whipped cream.
  4. To make the waffles: Preheat a waffle iron.
  5. In a bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda, and salt.
  6. In a small pan over simmering water, combine the chocolate, coffee, butter, and espresso powder, and stir until melted and blended.
  7. In another bowl, beat the egg whites with an electric mixer until soft, glossy peaks form.
  8. In another bowl, beat or whisk together the egg yolks, milk, and chocolate mixture.
  9. Add the milk mixture to the dry ingredients and mix just until combined.
