Poached Salmon & Greens With Lemon-Yogurt Dressing
- 1/4 cup GREY POUPON Dijon Mustard
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1-1/2 tsp. chopped fresh dill
- dash ground black pepper
- 1/4 cup plain low-fat yogurt
- 1/4 cup oil
- 1 pkg. (10 oz.) torn mixed salad greens
- 4 zucchini (1 lb.), thinly sliced
- 1/2 lb. skin-on salmon fillets, poached, flaked
- 4 oz. goat cheese, crumbled
- Mix first 4 ingredients in small bowl until blended; gradually whisk in yogurt and oil.
- Cover platter with salad greens; top with zucchini, fish and cheese.
- Serve with dressing.
