Orange Rice With Dried Cranberries and Apples

  1. Preheat oven to 350F.
  2. Butter a 2-quart casserole dish.
  3. In a medium heavy saucepan, combine rice and chicken broth.
  4. Bring to a boil.
  5. Reduce heat, cover, and simmer for 35-40 minutes or until liquid is absorbed.
  6. Remove from heat.
  7. Add dried cranberries, apples, parsley, orange zest, orange juice, and allspice.
  8. Mix well.
  9. Add salt and pepper to taste.
  10. Spoon into buttered casserole dish.
  11. Bake for 20 minutes or until heated thoroughly and apples are tender.
  12. Serve warm.
