Creamy Tomato Pesto Potato Salad
- 750g chat potatoes (small baby potatoes)
- 1/3 cup sun dried tomato pesto King Sooper's 1 lb For $0.99 thru 02/09
- 1/4 cup KRAFT Classic Mayonnaise
- 1/4 cup sour cream
- 1/3 cup KRAFT* Grated Parmesan Cheese
- 1/2 teaspoon black pepper
- 1/2 cup basil leaves, chopped
- 50g pinenuts, toasted
- Cook the potatoes in boiling water until tender, drain.
- Combine the pesto, mayonnaise, sour cream and half of the parmesan cheese, and pepper.
- Toss potatoes and mayonnaise mixture until well coated, and garnish with the remaining cheese, basil and scatter over the pine nuts.
