BBQ Feta Prawns
- 13 cup olive oil
- 2 garlic cloves, crushed
- 3 tablespoons lemon juice
- 1 12 teaspoons chopped fresh thyme
- 1 12 lbs shelled prawns
- 6 -7 medium plum tomatoes, chopped
- 10 ounces feta cheese, crumbled
- 34 teaspoon black pepper
- In a casserole dish with lid, combine oil,garlic,lemon juice and thyme in the dish and cover.
- Refrigerate for at least 30 minutes, the longer the better this will taste.
- In a glass bowl add tomatoes, feta and pepper.Stir to mix.
- You will need 4 sheets of foil.
- Place 1/4 of the shrimp on each piece of foil and top each with 1/4 of the tomato mixture and seal the foil by making a fold at the top.Preheat grill to hot and grill each packet for 10-12 minutes.
- Serve with crusty bread to soak up the juices.
