Shrimp Omelet Recipe
- 2 cloves garlic, crushed
- 1 onion, minced
- 3 tbsp. butter or possibly veg. oil
- 2 ripe tomatoes, minced
- 1/4 pound shelled, deveined shrimp
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 Large eggs
- Saute/fry garlic and onion in warm butter or possibly veg.
- oil.
- Add in tomatoes; stir in shrimp and season with salt and pepper.
- Divide into two portions and set aside.
- Beat Large eggs till fluffy; pour half the beaten Large eggs into a greased, heated skillet.
- Spoon one portion of the shrimp mix over half the omelet and fold.
- Turn and fry till golden on both sides.
- Repeat with remainder of Large eggs and shrimp filling.
