Potato Stuffed Portobellos #5FIX
- 4 large portabella mushroom caps (stems removed)
- 2 cups Simply Potatoes Traditional Mashed Potatoes
- 12 cup grated parmesan cheese
- 1 tablespoon chopped fresh rosemary
- 1 teaspoon minced fresh garlic
- Use a damp cloth to remove any dirt from mushrooms.
- Do NOT wash mushrooms!
- Drain any liquid from package of mashed potatoes.
- In a bowl, mix potatoes, garlic, 2/3 of cheese, and 2/3 of rosemary.
- Top the inside of each mushroom with 1/4 of potato mixture, spreading almost to the edge of the cap.
- Use a fork to create ridges on top of potatoes.
- Sprinkle remaining rosemary and parmesan cheese on top of potato.
- Place filled mushrooms, potato side up, in a baking dish and bake at 425 degrees for 30 minutes or until golden brown on top.
