Potato Stuffed Portobellos #5FIX

  1. Use a damp cloth to remove any dirt from mushrooms.
  2. Do NOT wash mushrooms!
  3. Drain any liquid from package of mashed potatoes.
  4. In a bowl, mix potatoes, garlic, 2/3 of cheese, and 2/3 of rosemary.
  5. Top the inside of each mushroom with 1/4 of potato mixture, spreading almost to the edge of the cap.
  6. Use a fork to create ridges on top of potatoes.
  7. Sprinkle remaining rosemary and parmesan cheese on top of potato.
  8. Place filled mushrooms, potato side up, in a baking dish and bake at 425 degrees for 30 minutes or until golden brown on top.
