Spicy Thai Pizza

  1. Combine rice, 1 cup cheese, 1/4 cup peanut butter and egg in large bowl.
  2. Press firmly into 12-inch pizza pan or 10-inch pie pan coated with cooking spray.
  3. Bake at 400F (200C) for 8 minutes.
  4. Mix remaining 3/4 cup peanut butter, water, cilantro, soy sauce, 2 tablespoons sesame oil and red pepper in small bowl; set aside.
  5. Stir-fry broccoli, onion and carrots in remaining 1 tablespoon sesame oil in large skillet over medium-high heat until tender-crisp.
  6. Spread sauce over crust; top with vegetable mixture.
  7. Sprinkle with remaining 1 cup cheese.
  8. Bake at 400F (200C).
  9. for 10 to 12 minutes.
  10. Let stand 5 minutes before serving.
