Scallop Stir-Fry With Black Bean and Stout Sauce
- 1 (15 ounce) can black beans, rinsed, drained and chopped
- 13 cup dark-colored beer
- 2 tablespoons low sodium soy sauce
- 2 tablespoons honey
- 2 teaspoons hoisin sauce
- 2 garlic cloves, minced
- 12 teaspoon salt
- 18 teaspoon red pepper flakes
- 2 tablespoons olive oil
- 1 medium red bell pepper, seeded and sliced into thin strips
- 1 12 cups fresh snow peas
- 1 12 cups thinly sliced carrots
- 1 12 lbs sea scallops
- Combine black beans, beer, soy sauce, honey, hoisin sauce, garlic, salt and red pepper flakes in blender or food processor; set aside.
- Heat oil in large nonstick skillet over medium-high heat.
- Add red bell pepper, snow peas and carrots; cook and stir 3 minutes.
- Add scallops and black bean sauce; stir-fry 6-10 minutes or until scallops are done and mixture is heated through.
