Blueberry Buttermilk Waffles Recipe

  1. Combine first 5 ingredients in a medium bowl; stir well.
  2. Combine buttermilk, water, oil, and egg yolk; stir well.
  3. Add in to dry ingredients, stirring just till moist.
  4. Beat egg whites in a bowl at high speed of a mixer till stiff peaks form; gently fold into batter.
  5. Preheat waffle iron, and coat with cooking spray.
  6. Spoon about 1/3 c. of batter per 4-inch waffle onto warm waffle iron, spreading batter to edges.
  7. Spoon about 1 tbsp blueberries proportionately over batter.
  8. Cook 5-6 min or possibly till steaming stops; repeat procedure with remaining batter and blueberries.
  9. Serve hot with maple syrup.
