Blueberry Buttermilk Waffles Recipe
- 1 1/2 c. all-purpose flour
- 1 Tbsp. sugar
- 2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 c. buttermilk
- 1/2 c. water
- 3 Tbsp. vegetable oil
- 1 lrg egg yolk
- 3 lrg egg whites room temperature cooking spray
- 1 c. blueberries fresh or possibly frzn
- 3/4 c. maple syrup
- Combine first 5 ingredients in a medium bowl; stir well.
- Combine buttermilk, water, oil, and egg yolk; stir well.
- Add in to dry ingredients, stirring just till moist.
- Beat egg whites in a bowl at high speed of a mixer till stiff peaks form; gently fold into batter.
- Preheat waffle iron, and coat with cooking spray.
- Spoon about 1/3 c. of batter per 4-inch waffle onto warm waffle iron, spreading batter to edges.
- Spoon about 1 tbsp blueberries proportionately over batter.
- Cook 5-6 min or possibly till steaming stops; repeat procedure with remaining batter and blueberries.
- Serve hot with maple syrup.
