Green Salad with Mango and Tomato

  1. Arrange greens evenly among 4 serving plates.
  2. Slice off top and bottom of tomato and discard.
  3. Slice tomato into four 12-inch slices.
  4. Place one slice each in center of greens.
  5. Arrange mango slices over tomato slices.
  6. In small bowl, mix lemon juice, salt and freshly ground pepper to taste.
  7. Whisk in oil.
  8. Drizzle dressing over salads and serve.
