Southwestern Barbecue Pizza
- 2 wheat or white flour tortillas (10- to 12-inch size)
- 2 tablespoons spicy barbecue sauce
- 1/2 cup seared, chopped vegetables or pepperoni, cooked chicken, beef, or pork
- 1/4 cup grated Cheddar or Monterey Jack cheeses, mixed
- 1 onion, chopped
- Crushed red caribe chile for garnish (optional)
- Preheat the oven to 425 degrees F. Place the tortillas on a baking sheet and bake for 3 minutes or until hot.
- Spread half the barbecue sauce on each tortilla, then top with half the vegetables or meat.
- Sprinkle with half the cheeses and onion.
- Bake for 8 minutes, or until the cheese is bubbly.
- Sprinkle chile, if using, and serve.
