Grilled Taco Pizza

  1. Preheat and clean your grill.
  2. Spray grill rack with baking spray.
  3. In a large dish, toss yam rounds with 1 Tablespoon of chile powder, salt, and 1 teaspoon cumin.
  4. Place yam rounds onto grill rack over medium heat and cook for 2-3 minutes on each side, until just cooked through.
  5. Remove from the grill and set aside to cool slightly.
  6. When cool, cut into 1/2 cubes.
  7. Place refried beans in a medium nonstick saucepan.
  8. Add 1/2 cup water, 1 teaspoon cumin and 2 teaspoon chile powder.
  9. Heat on low until warm.
  10. On clean grill rack, place tortillas (two were all that would fit at one time on mine).
  11. Cook over medium-low heat.
  12. When grill marks appear, remove from grill.
  13. On the side with marks, spread 1/3 cup refried beans, chopped yams, chopped onion, jalapenos (if desired), fresh chopped tomato, and cilantro.
  14. Place a few mozzarella slices (or feta) evenly onto toppings.
  15. Return pizza to grill for an additional 3-4 minutes, until cheese is melted and tortilla is crispy.
  16. Remove from grill and place 1/2 cup fresh salad greens onto pizza and slice into quarters.
  17. Garnish with salsa if desired and serve.
