BBQ Butternut Squash & Kale Pizza
- 1 Tablespoon Olive Oil
- 3 cloves Garlic, Minced
- 2 cups Butternut Squash, Cut Into Chunks
- 1 whole (Medium-Large Size Pizza) Batch Of Whole Wheat Pizza Dough, Homemade Or Storebought
- 2 cloves Garlic, Minced
- 3 Tablespoons BBQ Sauce (I Like Trader Joe's)
- 1 cup Red Onion, Sliced
- 1 cup Shredded Mozzarella, Divided
- 1/4 cups Shredded Parmesan Cheese, Divided
- 3 cups Kale, Cut Into Pieces
- Preheat oven to 425 degrees F. If you are using a pizza stone, place it in the oven while preheating.
- For the squash, in a cast iron skillet over medium heat, add olive oil, minced garlic and butternut squash.
- Saute until squash is tender/firm, about 10 minutes.
- You may need to add a little water.
- For the pizza, stretch pizza dough out.
- Remove stone from oven, and place pizza dough on stone or a baking pan.
- Spread garlic onto dough.
- Spread on BBQ sauce next.
- Now layer on the squash mixture and sliced onions.
- Top with half of the mozzarella and Parmesan cheese.
- Bake 15 minutes then remove it from the oven.
- Sprinkle kale over entire pizza and top with remaining cheese.
- Bake 15-20 minutes more until dough is golden brown and crispy on the bottom.
- Enjoy.
