Curry Chicken Casserole Recipe
- Cooked dark chicken meat
- Cooked fresh broccoli
- 2 c. cream of chicken soup
- 1 c. mayonnaise
- 1/2 or possibly 1 teaspoon lemon juice
- 1 teaspoon curry pwdr
- Chicken broth
- butter
- Bread crumbs
- 3/4 pound Swiss cheese, grated
- 1 pound cheddar cheese, grated
- Grease casserole or possibly baking dish well.
- Layer chicken and add in 1/8 c. chicken broth.
- Add in broccoli.
- Mix soup, curry, lemon juice and pour over broccoli and chicken.
- Sprinkle cheese, then bread crumbs and some melted butter on top.
- Bake 20-30 min at 350 degrees.
- This freezes real well uncooked.
- You can also cook it in the microwave.
- A variety of vegetables can be used.
- Be imaginative.
