Cool-As-A-Cucumber Shrimp Sandwich
- 13 cup minced green onion
- 14 cup light cream cheese, softened
- 14 cup light mayonnaise
- 14 cup plain low-fat yogurt
- 1 teaspoon fresh dill
- 12 teaspoon garlic salt
- 14 teaspoon black pepper
- 6 (1 1/2 ounce) French rolls
- 1 12 lbs large shrimp, cooked and peeled
- 1 cup thinly sliced cucumber
- 12 cup thinly sliced radish
- 6 leaves curly leaf lettuce
- In a small bowl, combine green onions, cream cheese, mayonnaise, yogurt, dill, garlic salt, and pepper.
- Split rolls and spread each half with cream cheese mixture.
- Arrange shrimp on bottom halves of rolls.
- Top with cucumber slices, radish slices, and lettuce leaves.
- Place top halves of rolls over all and serve.
