Ww Veggie Pasta Wedges
- 3 12 ounces dry pasta
- low-fat cooking spray (10 sprays)
- 1 medium onion
- 1 medium red pepper
- 1 medium zucchini
- 4 eggs
- 3 12 ounces low-fat soft cheese
- 2 teaspoons dried oregano
- 1 pinch salt
- 18 teaspoon pepper
- Cook the pasta shapes in boiling, salted water for 10 - 12 minutes, until just tender.
- Meanwhile, spray a non-stick frying pan with low fat cooking spray and add the onion, pepper and zucchini.
- Cook for 4-5 minutes, stirring often.
- Remove from the heat.
- Drain the pasta and add to the vegetables.
- Beat the eggs and soft cheese together.
- Stir in the dried herbs and season with salt and pepper.
- Add the vegetables and pasta.
- Spray a 9 inch round baking dish with low fat cooking spray.
- Add the pasta mixture.
- Bake in the oven for 25 minutes, until set and golden brown.
- Serve warm or cold, sliced into wedges.
